Ingredients
For the salad
- 4 cups arugula
- 1 cup cherry tomatoes halved
- 1 cup cannellini beans rinsed and drained
- 1/4 cup red onion thinly sliced
- 1/2 cup Parmesan Cheese shaved
- 2 tablespoons pine nuts toasted
- 1 tablespoon chopped parsley
For the dressing
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- salt and pepper to taste
Instructions
- Place the arugula, cherry tomatoes, beans, onion, parmesan cheese and pine nuts in a large bowl.
- In a small bowl, whisk together the olive oil, lemon juice, mustard, salt and pepper.
- Pour the dressing over salad and toss to coat. Sprinkle with parsley and serve.
