Asian Cabbage Mango Slaw

Ingredients

  • 3 tbsp rice vinegar
  • ½ a lime juiced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cups of green cabbage shredded
  • ½ cup of shredded carrots
  • ¼ cup of fresh cilantro chopped
  • 2 green onions chopped
  • 1 baby red bell pepper sliced
  • 1 Mango nearly ripe, sliced
  • toasted sesame seeds to taste

  1. Make the vinaigrette by combining the rice vinegar, lime juice, soy sauce, and sesame oil in a small glass jar and seal with a lid; shake well. Set aside to allow the flavors time to mingle.   
  2. Make the salad by combining the cabbage with the carrots, cilantro, green onion, and red bell pepper in a bowl and toss.  
  3. Add the sliced mango and sesame seeds then drizzle with the salad dressing. Gently toss to combine.
