Asian Cabbage Slaw with Ginger Vinaigrette
This bright and flavorful Asian Cabbage Slaw with Ginger Vinaigrette is the perfect side dish for stir-fries or Summer grilling. Inspired by classic Asian flavors, it's healthy, delicious and filling.
Ingredients
Asian slaw:
- ½ green cabbage (thinly sliced – savoy and napa work well)
- ½ cup scallions (thinly sliced)
- ¼ cup mint minced, fresh
- ¼ cup cilantro (roughly chopped)
- ¼ cup almond or roasted peanuts, toasted; slivered
- 2 tablespoons black sesame seeds optional garnish, roasted
Sesame Ginger Vinaigrette
- 3 tablespoons rice wine vinegar
- 2 tablespoons soy sauce (low sodium)
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 tablespoon ginger root (grated)
- ½ tablespoon chili paste (optional)
Instructions
- Add cabbage, scallions, cilantro and mint to a large bowl.
- In a small bowl, whisk together vinaigrette and drizzle over the slaw. Toss well, check for seasoning and adjust accordingly.
- Sprinkle toasted almonds on slaw before serving.
Notes
- Serving size will vary depending on the size of your cabbage head. In fact, 1/4 of the dish will most likely be more than 2 cups of slaw. Slaw can be dressed well in advance because the cabbage is sturdy enough that it won’t wilt. Great for parties!
