Ingredients

Sesame Peanut Dressing:
  • 1/2 cup peanut butter
  • 1 tablespoon soy sauce low sodium
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons sriracha
  • 1 teaspoon sesame oil
  • 1/4 cup water
Chicken Salad:
  • 6 cups romaine lettuce , chopped
  • 1 cucumber , peeled and chopped
  • 2 cups chicken breast , cooked and chopped
  • 1 carrot shredded, medium
  • 1/4 cup peanuts , chopped
  • 1/4 cup cilantro , chopped

Instructions

  1. To make the dressing, whisk together peanut butter, soy sauce, rice wine vinegar, sriracha, sesame oil, and water.
  2. To make the salad, to a large bowl add the lettuce, cucumber, chicken, and carrots.
  3. Toss with dressing, garnish with cilantro and chopped peanuts.
