Asian Cucumber Salad

Asian Cucumber Salad is a quick and easy marinaded cucumber salad with rice vinegar, sugar and crushed peppers. The perfect side dish.

Ingredients

  • 2 cucumber
  • 1/3 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Wash and peel the cucumbers. Slice into thin circles, then cut the circles in half, removing the seeds as you go.
  2. Add cucumber slices to a bowl along with the remaining ingredients. Stir to coat well. Let sit for at least 1 hour before eating.
