For the Atole the Avena
- ½ cup old-fashioned oats
- 2½ cups whole milk
- 1 ( 12 fl oz) Full fat evaporated milk or 1-½ cups of whole milk
- 2¼ cups water
- ½ cup brown sugar
- 3 cinnamon sticks
- 1 tablespoon pure vanilla extract
Instructions
- Add water and cinnamon stick to a medium-sized saucepan, cover, and bring to a boil. Lower heat and simmer for about 5 minutes.
- Add oats, milk, brown sugar, and evaporated milk to a blender and blend until smooth.
- Add the oat mixture and simmer uncovered, stirring frequently until the oat mixture coats the back of the spoon, about 10 minutes, or until it reaches desired consistency.
- Remove the pot from heat and stir in the pure vanilla extract. Taste and adjust the sweetness with more brown sugar if desired.
- Remove the cinnamon stick and divide the Atole de Avena evenly among serving mugs. Serve warm.
