Atole de Avena

Ingredients

For the Atole the Avena
  • ½ cup old-fashioned oats
  • 2½ cups whole milk
  • 1 ( 12 fl oz) Full fat evaporated milk or 1-½ cups of whole milk
  • 2¼ cups water
  • ½ cup brown sugar
  • 3 cinnamon sticks
  • 1 tablespoon pure vanilla extract

  1. Add water and cinnamon stick to a medium-sized saucepan, cover, and bring to a boil. Lower heat and simmer for about 5 minutes.
  2. Add oats, milk, brown sugar, and evaporated milk to a blender and blend until smooth.
  3. Add the oat mixture and simmer uncovered, stirring frequently until the oat mixture coats the back of the spoon, about 10 minutes, or until it reaches desired consistency.
  4. Remove the pot from heat and stir in the pure vanilla extract. Taste and adjust the sweetness with more brown sugar if desired.
  5. Remove the cinnamon stick and divide the Atole de Avena evenly among serving mugs. Serve warm.
