Avocado and Red Quinoa Salad Recipe

Ingredients

  • 4 ounces red quinoa cooked & chilled
  • 2 ears fresh corn cooked & kernels removed or 6 ounces frozenthawed
  • ½ cup scallions thinly sliced
  • 1 plum tomato diced
  • 1 avocado diced
  • ½ cup fresh cilantro finely chopped
  • ¼ cup olive oil extra virgin
  • 1 lemon juice from
  • salt & pepper to taste

Instructions

  1. Combine the cooked and chilled red quinoa with the corn, cilantro, tomato and scallions in a large bowl.
  2. Gently add the diced avocado and stir to combine.
  3. Add the extra virgin olive oil and the juice from the lemon. Being as careful as you can so not to mush the avocado, stir everything together.
  4. Season with salt and pepper, taste and adjust with more oil, lemon, salt or pepper.

Notes

  • Personally, I like to let it sit a while before adjusting the seasoning but you can do it at any time.
