Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup avocado about 2 medium avocados, mashed
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 2 egg large
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans chopped

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9 inch x 5 inch baking pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt, then set aside.
  3. In a separate bowl, whisk the mashed avocado, sugar, oil, milk, eggs, and vanilla extract until smooth.
  4. Add the flour mixture to the avocado mixture and stir until just combined. Fold in the chopped pecans.
  5. Transfer the batter to the prepared pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before removing it to cool completely on a wire rack.
