Avocado Caesar Salad (Vegan, Paleo)
This Avocado Caesar Salad dressing blends ripe avocado with garlic, lemon juice, apple cider vinegar, Dijon mustard, salt, nutritional yeast, and water for a creamy, tangy, and dairy-free alternative. Tossed with Romaine lettuce, it offers a fresh, flavorful salad suitable for vegan and paleo diets.
Ingredients
- 1 avocado pitted (about 1/2 cup mashed, ripe
- 5 cloves garlic , minced
- 2 tablespoons lemon juice fresh
- 1 teaspoon apple cider vinegar raw
- 3/4 cup water
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt sea salt
- 2 tablespoons nutritional yeast
Instructions
- Combine all of the dressing ingredients in a high-speed blender, and blend until completely smooth. Pour over chopped Romaine lettuce, and toss well to coat.
- Serve with roasted potatoes as "croutons," if desired. Leftover dressing can be stored in the fridge for up to 3 days.
