Ingredients
- 8 ounces Galbani Fresh Mozzarella Salad Balls
- 2 ripe avocados (chopped)
- 1 cup Grape or Cherry Tomatoes (halved)
- 1/4 cup fresh basil leaves (roughly chopped)
- 2 tablespoons basil pesto (optional)
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 2 tablespoons balsamic glaze (see notes)
- salt (to taste)
- pepper (to taste)
Instructions
- To a salad bowl, add Galbani fresh mozzarella salad balls, avocado, tomatoes, and fresh basil.
- In a small bowl, whisk pesto, olive oil, garlic, balsamic glaze, and a light sprinkle of salt and pepper.
- Drizzle salad with balsamic dressing mixture and gently stir to combine. Taste and adjust salt and pepper, if needed.

Notes
- To make your own balsamic reduction (balsamic glaze): Combine 1/2 cup balsamic vinegar and 1 tablespoon honey or sugar to a small saucepan. Bring to a boil then reduce and simmer on low heat for 10-15 minutes or until the sauce coats the back of the spoon. Allow it to cool before adding to the salad.
