Avocado Chicken Salad

This Avocado Chicken Salad is loaded with so much flavor and made with healthy ingredients! It's delicious, satisfying and perfect for a light lunch, brunch or dinner!

Ingredients

  • 2 avocados mashed
  • 1 tablespoon lime juice freshly squeezed
  • ¼ teaspoon salt or to taste
  • ¼ teaspoon pepper or to taste
  • 2 cups cooked chicken shredded or cut small, from a rotisserie chicken
  • 1 roasted red pepper
  • ¾ cup cheddar cheese shredded
  • 1 talk celery chopped
  • 2 green onions chopped
  • ½ green bell pepper chopped
  • ½ cup pecans chopped
  • ½ cup parsley chopped
  • ¼ cup red onion chopped small
  • ¾ cup Greek yogurt

Instructions

  1. In a large bowl roughly mash the avocados, then add the lime juice and season with salt and pepper.
  2. To the same bowl add the rest of the ingredients and toss well.

Notes

  • Chicken: Use rotisserie chicken to save time. You could also cook your own chicken breast.
  • Leftovers: Transfer the salad to an airtight container, and place plastic wrap directly over the surface of the salad to prevent the avocados from turning brown. Refrigerate for up to a couple days.
