Avocado Cilantro Lime Rice

A delicious upgrade on plain brown rice. You'll love this bright and creamy cilantro, lime and avocado addition!

Ingredients

  • 4 1/2 cups cooked brown (preferably day old)
  • 2 avocado 11 oz before peeling and coring, medium, ripe
  • 2 Tbsp lime juice fresh
  • 1/4 cup cilantro chopped
  • 1/4 tsp (heaping) cumin ground
  • 1 garlic minced (optional, small clove
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground

Instructions

  1. Mash avocados in a large mixing bowl. Stir in lime juice, cilantro, cumin and garlic, then season with salt and pepper to taste. Stir in warm cooked rice and serve warm.
