Ingredients

  • 4 tomato ripe, cut into wedges
  • 4 cucumber persian, sliced into coins
  • 2 avocado ripe, cubed
  • lemon juice of 1
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt

Instructions

  1. Place the first 3 ingredients in a large bowl.
  2. Whisk the remaining ingredients in a bowl until emulsified.
  3. Pour the dressing over the vegetables and gently toss trying to avoid smashing the avocados.
