Avocado Cucumber Tomato Salad is a refreshing and flavorful dish. This is the tastiest summer salad, which can be put together in less than 10 minutes. It is loaded with avocado, cucumber, tomato, red onions, cilantro, and tossed in a light lime dressing with Indian chaat masala, for a tangy, delicious salad!

Ingredients
- 1 avocado large, ripe, diced, about 1 cup
- 2 cucumber diced, I used persian, about 1 cup
- 1 cup cherry tomatoes halved
- 1/4 cup red onion sliced
- 1/4 cup cilantro leaves chopped
- 1/2 teaspoon chaat masala see notes
- 2 teaspoon lime juice or Lemon juice
- 2 teaspoon extra virgin olive oil optional
- 1/4 teaspoon salt
- black pepper freshly crushed, to taste
Instructions
- Peel, pit and chop the avocado. Slit the cucumber and dice to small pieces. Slice the red onions into thin slices. Half the cherry tomatoes .
- Add all ingredients in the suggested order to a mixing bowl. Toss well. Serve right away.
- You can also cover and refrigerate for up to 30 minutes. Toss before serving!

Notes
- Avocado: Choose an avocado that is ripe but still firm. It works best to keep the avocado pieces intact in the salad.
- Refrigerate: If you plan to refrigerate the salad, add the avocado right before serving.
- No Chaat Masala: If you don't have chaat masala, it is fine to skip it. Add some garlic powder and make it is simple salad dressing.
