Avocado Fries

Ingredients

  • ¼ cup flour
  • ¼ tsp salt
  • ¼ tsp taco seasoning or chili powder
  • Pinch of cayenne pepper
  • ¾ cup panko breadcrumbs
  • 2 large avocados
  • cooking spray
  • Flaky sea salt for serving
  • Lime wedges for serving

Instructions

  1. First, prepare your breading station. Lightly beat the egg in a shallow bowl and set aside. Combine the flour, salt, taco seasoning or chili powder, and cayenne pepper in a shallow bowl, and set aside. Tip the panko breadcrumbs into a third bowl.
  2. Peel and halve the avocados, removing the pits before slicing into roughly 6 thick spears per avocado.
  3. Coat the avocado spears first into the flour mixture, then the egg, then the breadcrumbs. Use one hand for the egg and another for the dry ingredients to avoid coating your fingers!
  4. To cook in the air fryer: spritz the breaded avocado spears with cooking spray and cook at 400 for 15 minutes, turning halfway.
  5. To cook in the oven: Preheat the oven to 430F while you are preparing the avocado. Spread out on a parchment lined baking sheet and spritz with cooking spray. Bake for 20 minutes, turning halfway.
  6. Serve sprinkled with flaky sea salt with the fresh lime wedges squeezed over the top. 

Notes

  • Air fryer tip: If you’re cooking these in the air fryer use a pure olive oil spray as some synthetic sprays can damage the non-stick lining of your air fryer.
