Ingredients

  • 1 medium avocado ripe
  • 4 slices bread
  • 2-3 slices Monterey jack cheese
  • 2-3 slices cheddar cheese
  • 2 tablespoons butter softened
  • salt to taste
  • black pepper to taste

Instructions

  1. Halve the avocado, remove the pit, and slice it thinly.
  2. Butter one side of each bread slice. Place two slices, butter-side down, in a cold pan.
  3. Layer Monterey Jack cheese, avocado slices, salt, pepper, and cheddar cheese on the bread in the pan.
  4. Top with the remaining bread slices, butter-side up. Turn the heat to medium and cook until the bread is golden and the cheese is melted, flipping once.
