Avocado Matcha Muffins

These Avocado Matcha Muffins make for a great snack or can be a perfect part of a balanced breakfast.

Ingredients

  • 1 large avocado, ripe
  • 1/2 cup maple syrup
  • 1/4 cup whole milk
  • 1 Tbsp. lemon juice, fresh
  • 1 large egg
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 1/2 Tbsp. matcha powder
  • 1 Tbsp. hemp seeds
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup white chocolate chips optional

  1. Preheat the oven to 350 degrees F. Spray a cupcake tin with PAM or line with liners and set aside. 
  2. In a stand mixer using the flat eded beater  (or use a food processor), mix the avocado and maple syrup together for 1-2 minutes. Then add in the milk, lemon juice, egg and vanilla extract. Blend and set aside. 
  3. In a separate medium sized bowl, whisk together the flour, matcha, hemp seeds, baking powder and salt. Gently fold this dry mixture into the wet ingredients. 
  4. Stir in chocolate chips or you can sprinkle some on top (optional step). Scoop batter into prepared muffin tin and bake for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean. Enjoy!
