Ingredients

  • 2 avocado diced, ripe
  • 3/4 cup cherry tomato halved
  • 1/2 red onion thinly sliced, medium
  • 1 bell pepper chopped (any color, small
  • 1/4 cup cilantro chopped, fresh
  • 2 tablespoons lime juice
  • 3 tablespoons extra virgin olive oil
  • salt to taste
  • black pepper to taste

Instructions

  1. In a small bowl, make the dressing by whisking together lime juice, olive oil, salt, and black pepper.
  2. In a large bowl, mix the dressing and the remaining ingredients. Toss to combine and adjust seasoning as needed. Serve immediately.
