Ingredients

  • 2 Diced avocados
  • 1 sliced English cucumber
  • 3 diced Roma tomatoes
  • ¼ cup sliced red onion
  • 1 cup arugula
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • salt and pepper
  • ¼ cup feta cheese

Instructions

  1. In a large bowl, combine 2 diced avocados, 1 sliced English cucumber, 3 diced Roma tomatoes, ¼ cup sliced red onion, and 1 cup arugula. Gently toss.
  2. In a small bowl, whisk the 2 tablespoons olive oil, and 2 tablespoons lemon juice. Add to the veggies and toss.
  3. Season with salt and pepper, and top with crumbled ¼ cup feta cheese.
