But then comes the good stuff: chunks of smoky, slow-cooked brisket that melt in your mouth, spicy chorizo for a kick, salty bacon, and finally, chunks of tender steak. Ingredients

Meats
  • 1.5 Pounds ground beef
  • 9 Ounce chorizo
  • ½ Pound Cubed Beef Tenderloin Steak
  • 6 lices Bacon
  • ½ Cup Chopped Smoked Brisket Optional
Canned Ingredients
  • 15 Ounce mild chili beans
  • 15 Ounce Hot Chili Beans
  • 15 Ounce black beans drained
  • 10 Ounce ROTEL Chili version
  • 15 Ounce diced tomatoes
Veggies
  • 2 bell peppers Diced
  • 2 yellow onions Diced
  • ½ Cup Hatch green chiles or canned green chiles
  • 2 jalapeños diced
Liquids and Seasonings
  • 5 Tablespoons chili powder
  • 1 Cup Spicy Tomato Juice
  • 1 teaspoon salt adjust to preference

Instructions

  1. Heat a Dutch oven or skillet over medium heat. Cook the strips of bacon until just crispy. Remove to a plate and break into small pieces.
  2. Cook the diced onion, bell peppers, and jalapenos in the bacon grease until softened, about 3-5 minutes. Remove with a slotted spoon.
  3. Cook the ground beef and chorizo until browned and cooked through. Drain the grease.
  4. Add the pieces of steak and cook until browned on the outside.
  5. If cooking in a Dutch oven, combine all of the remaining ingredients, or add all of the ingredients into a slow cooker or crock pot. Bring to a low boil, then reduce and simmer for 2 hours.
  6. Taste and add additional salt or seasoning if desired. Keep warm until you are ready to eat.
