Ayam Goreng

Ingredients

  • 1 chicken , cut into pieces
  • 3 shallots , peeled
  • 3 cloves garlic , peeled
  • 2½ inch piece of galangal
  • 1¼ inch piece of fresh turmeric
  • 1 tablespoon coriander seeds
  • 1 teaspoon tamarind paste
  • 2 tablespoons palm sugar
  • 1 teaspoon salt
  • ½ teaspoon white pepper
  • 1 cup water
  • 2 salam leaves (Indonesian bay)
  • 1 stalk lemongrass
  • neutral vegetable oil , for frying

Instructions

  1. In a mortar (or in the jug of a blender), place the shallots, garlic, galangal, fresh turmeric, coriander seeds and pound well to form a paste.
  2. Place the chicken pieces in a pot, then add the water, spice paste, salt, bay leaves, pepper and lemongrass. Cover and cook over medium heat for 10 minutes.
  3. Turn the chicken over, and cook for another 10 minutes.
  4. Remove from the heat and drain.
  5. In a deep pan, heat a generous amount of oil and bring it to a temperature of 340 F (170°C).
  6. Fry the chicken until golden brown.
  7. Serve with lime or kaffir lime slices, white rice and sambal.
