Ingredients

  • 1 pound baby carrots
  • 2 1/2 tablespoons olive oil
  • 3 tablespoons honey
  • salt to taste
  • Ground black pepper to taste
  • 3 tablespoons fresh parsley chopped

Instructions

  1. Preheat the oven to 425°F.
  2. Combine the baby carrots with olive oil, honey, salt, and pepper in a mixing bowl. Toss until evenly coated.
  3. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 30-35 minutes, or until the carrots are tender and slightly caramelized. Serve with parsley sprinkled on top.
