Bacon Cheeseburger Rice Skillet

This easy dinner is perfect for the busiest nights because it can be ready in as little as 15 minutes! With all the best flavors of cheeseburger, this meal is a crowd pleaser perfect for families. Hearty and filling this casserole can stand alone or be served with sides for a well rounded meal.

Ingredients

  • 2 lbs lean ground beef
  • 1 onion finely diced
  • 1 cup BBQ sauce
  • 1 tbsp yellow mustard
  • 1/2 tsp black pepper
  • 2 cups instant rice
  • 2 cups broth
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet, brown the beef and onion over medium heat (about 5 minutes)
  2. Drain excess fat, then add the bbq sauce, mustard, pepper, and rice and stir to combine. Cover the mixture with the broth.
  3. Sprinkle cheese over the top, then cover with a lid and simmer for 5-7 minutes.
  4. Garnish with crispy crumbled bacon and chopped green onions. Enjoy!
