Bacon & Fruit Brunch Kabobs (The easiest no-recipe tricks!)

Bacon & Fruit Brunch Kabobs provide a combination of savory bacon slices and mixed berries threaded onto soaked bamboo skewers, then baked until the bacon crisps and the fruit is lightly coated in a simple lemon-sugar-mint syrup. The method emphasizes easy assembly with cooked bacon wrapped in waves on skewers, offering a sweet and savory mix ideal for brunch serving or gatherings.

Ingredients

  • 1 pound Bacon (usually 16-20 slices in a pound)
  • 2 pounds mixed berries
  • 36 bamboo skewers
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon mint optional, minced

Instructions

    Cup of Yum
  1. Soak your bamboo used for the bacon for an hour or so.
  2. Thread the bacon onto the skewers.
  3. For the best look I usually make it pretty wavy, this also prevents the bacon from sitting completely in the rendered fat.
  4. Line your baking sheet with parchment paper and put the skewers on the sheet.
  5. Without preheating, put the bacon in the oven.
  6. Turn the oven onto 400 degrees and set your timer for 12 minutes.
  7. The bacon will take anywhere from 12-15 minutes to cook, but after 12 minutes it is a good idea to keep an eye on it as you don't want it to burn and the last bit of browning happens pretty quickly.
  8. For the berries, mix the water, sugar, lemon juice and mint and toss the berries in it.
  9. Skewer as you wish on the bamboo sticks.
  10. Try to save some for the guests :)
