Bacon Roasted Chicken Thighs

Ingredients

  • 3 pounds potatoes
  • 2 medium onions quartered
  • 4 whole garlic cloves peeled
  • 2 tablespoons chopped chives
  • ½ teaspoon garlic powder
  • salt and pepper
  • 4-5 sprigs rosemary
  • 1 tablespoon olive oil
  • 4 chicken thighs skin-on bone-in
  • 4 lices thick cut bacon

Instructions

  1. Preheat the oven to 400 degrees.
  2. Wash the potatoes well and cut into bite-size pieces.
  3. Place the potatoes, onions and garlic in a 9x13 roasting pan.
  4. Sprinkle with the chopped chives, garlic powder, salt and pepper. Place the rosemary sprigs among the potatoes and onions.
  5. Drizzle with the olive oil.
  6. Place the chicken thighs, skin sides up, on top of the potatoes and onions.
  7. Cut the bacon slices in half and place two halves on top of each chicken thigh.
  8. Cook for 50-60 minutes or until chicken is done throughout.
