Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts cut into 1-inch cubes
  • kosher salt to taste
  • black pepper to taste
  • 2/3 cup brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 tablespoons chili powder
  • 1 pound Bacon slices cut into thirds
  • Freshly chopped parsley for garnish optional

Instructions

  1. Preheat oven to 350°F. Line a baking sheet with foil and place a wire rack on top. Lightly coat the rack with nonstick cooking spray.
  2. In a bowl, toss chicken cubes with salt and black pepper.
  3. In a separate bowl, mix brown sugar, garlic powder, onion powder, and chili powder. Cut bacon slices into thirds.
  4. Wrap each chicken cube with a piece of bacon, secure with a toothpick, and dredge in the brown sugar mixture. Arrange on the prepared rack.
  5. Bake for 25-35 minutes or until bacon is crisp and chicken is cooked through. If using, sprinkle with parsley before serving.
