Bacon-Wrapped Dates
The combination of smoky bacon, caramel-like Medjool dates, and goat cheese make for an appetizer that's oh-so-refined yet easy to prepare!
Ingredients
- 10 lices Bacon
- 20 Medjool dates
- 5 ounces goat cheese crumbled
- cilantro optional, or parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F and line a large baking sheet with parchment paper.
- Arrange the bacon strips next to each other on the baking sheet. Cook for roughly 10 minutes, until they are halfway cooked but remain flexible.
- Meanwhile, make a lengthwise cut in each date to remove pits. Stuff each date with goat cheese and press to close.
- After the bacon has cooled to touch, cut the strips in half. Take a half strip and wrap it around each stuffed date, securing it with a toothpick.
- Place the bacon-wrapped dates on a fresh sheet of parchment paper on the baking sheet. Bake for 5-7 minutes per side, flipping halfway through, until bacon is crispy.
- When serving, sprinkle with chopped parsley or cilantro if desired.
