Bacon-Wrapped Dates

The combination of smoky bacon, caramel-like Medjool dates, and goat cheese make for an appetizer that's oh-so-refined yet easy to prepare!

Ingredients

  • 10 lices Bacon
  • 20 Medjool dates
  • 5 ounces goat cheese crumbled
  • cilantro optional, or parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  2. Arrange the bacon strips next to each other on the baking sheet. Cook for roughly 10 minutes, until they are halfway cooked but remain flexible.
  3. Meanwhile, make a lengthwise cut in each date to remove pits. Stuff each date with goat cheese and press to close.
  4. After the bacon has cooled to touch, cut the strips in half. Take a half strip and wrap it around each stuffed date, securing it with a toothpick.
  5. Place the bacon-wrapped dates on a fresh sheet of parchment paper on the baking sheet. Bake for 5-7 minutes per side, flipping halfway through, until bacon is crispy.
  6. When serving, sprinkle with chopped parsley or cilantro if desired.
