Bacon Wrapped Green Bean Bundles

Bacon Wrapped Green Bean Bundles make the BEST holiday side dish! Fresh green beans are wrapped in bacon and topped with a homemade mustard vinaigrette. Baked to perfection, this side dish is ready in less than an hour and perfect for sharing.

Ingredients

Mustard Vinaigrette
  • 4 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon grainy dijon mustard
  • 4 cloves garlic finely minced
  • ½ teaspoon granulated sugar
  • ¼ teaspoon kosher salt
Green Bean Bundles
  • 1 ½ lb. fresh green beans trimmed
  • 12 oz. Bacon
  • 1 onion cut into slivers
  • freshly ground black pepper to taste

Instructions

  1. In a mason jar, mix the vinaigrette ingredients (oil, vinegar, mustard, garlic, salt and pepper) together until combined. Set aside.
  2. Preheat the oven to 350°F. Spray a baking dish or a rimmed sheet pan with nonstick cooking spray, and set aside.
  3. Cut the bacon slices in half, to where you have double the amount of bacon to wrap the bundles.
  4. Take 7-10 green beans, and wrap a bacon strip around each of the bundles. Set into the prepared baking dish. Continue until all the green beans have been wrapped.
  5. Sprinkle the onion on top of the bundles.
  6. Season the bundles liberally with pepper (if you like this!), and drizzle the vinaigrette over them.
  7. Pop the baking dish into the oven for 30 minutes.
  8. When the bundles have cooked for 30 minutes, turn up the heat to 425°F, and cook for an additional 15-20 minutes, or until the bacon is crispy.
  9. Transfer the Green Bean Bundles to a serving dish, and enjoy warm with your Thanksgiving meal!

Notes

  • Don't want to use sugar? You can substitute the same amount of honey in the dressing easily.
  • How to store: Store leftover bundles in an airtight food storage container in the fridge for 2-3 days. Reheat in the microwave until warmed through. They will not be as crispy, but they are still delicious.
