Bacon Wrapped Pork Meatloaf
This Pork Meatloaf is one of the best meatloaf recipes I have ever made! It’s made of juicy pork and sausage then wrapped in crispy bacon with various spices.

- 1 pound ground pork
- ½ pound ground sausage no casing
- 6-8 slices Bacon for wrapping meatloaf, more or less to taste
- ⅓ cup onion, finely diced ½ small onion
- ⅓ cup bell pepper green, yellow, orange or red, finely diced
- 1 large eggs
- ½ cup buttermilk
- 1 tablespoon yellow or dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon garlic minced, more or less to taste
- 1 tablespoon thyme more or less to taste
- 1 tablespoon dried parsley
- ½ teaspoon pepper
- ½ teaspoon salt
- ¾ cup breadcrumbs, crackers, stuffing mix, croutons or panko, crushed I prefer using crushed, unsalted, saltine crackers (14-16)

- 1 cup bacon, pancetta or ham, diced about 1 pound
Instructions
- Preheat your oven to 400 degrees. Prepare a rimmed baking sheet with tinfoil and a rack lightly coated in cooking spray. Set aside.
- In a large bowl, add the eggs, buttermilk, mustard, Worcestershire, peppers, onions, garlic, thyme, salt, and pepper. Stir until combined.
- Add the ground pork, sausage,optional bacon, pancetta or ham, if using, crumbs, and parsley. I prefer to use my hands at this point but it is up to you. Be careful to combine but not overmix.
- Form the meat into a long cylinder or loaf.
- Lay your bacon strips on top of your meatloaf, tucking the ends underneath. You want the slices to slightly overlap and trim bacon slices to fit and place on prepared baking sheet.
- Bake for 60 minutes or until the internal temperature is 160 degrees. Remove from the oven and let rest for 10-15 minutes before serving. Slice and enjoy!

Notes
- Make an even loaf: When you form the meatloaf, ensure it is even and the top is flat. If uneven, it won’t cook properly.
- Don’t overmix the meatloaf: Ensure that you don’t overwork the meatloaf mixture. It can cause it to become tough as it bakes.
- Baste it: Try brushing the outside of the meatloaf with BBQ sauce or ketchup for moisture and to help caramelize the bacon further.
