Ingredients

  • 8-10 lices Bacon
  • 1 pound pork tenderloin
  • salt to taste
  • black pepper to taste
  • 1 tablespoon olive oil
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 390°F.
  2. Lay out the bacon slices on a cutting board, overlapping slightly, to match the length of the pork tenderloin.
  3. Season the pork tenderloin with salt and pepper, and tuck the thinner end under to create an even thickness.
  4. In an oven-proof skillet, heat the olive oil over high heat and sear the pork on all sides until browned. Remove from heat and let it cool slightly.
  5. Wrap the pork tenderloin with the prepared bacon, ensuring the seam is on the bottom.
  6. Drizzle honey over the bacon-wrapped pork and brush to coat evenly.
  7. Bake in the preheated oven for 25 minutes, basting with pan juices after 20 minutes, until the internal temperature reaches 145°F.
  8. Let the pork rest for 5 minutes after baking, then baste again before slicing. Serve with the remaining pan juices.
