Baked Apple Cinnamon Oatmeal

This apple cinnamon baked oatmeal is so satisfying and comforting! Make ahead and serve with honey, cream and cinnamon. Delicious!

Ingredients

  • 4 1/2 cups quick oats
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 2 cups milk (whatever you like! dairy or nondairy)
  • ½ cup applesauce
  • 1/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 2 cups diced apples (I don’t peel mine, but you can if you wish)
  • sliced apples for topping
  • honey, for topping
  • cream, for drizzling

  1. Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
  2. In a large bowl, whisk together the oats, sugar, cinnamon, baking powder and salt. In a smaller bowl, whisk together the eggs, milk, applesauce, oil and vanilla extract. Add the wet ingredients to the dry and stir until combined. Stir in the diced apples. Pour the mixture in the dish.
  3. Bake for 35 to 40 minutes, or until the top is golden brown and set. Remove the dish from the oven. Let cool slightly then cut into squares and serve with sliced apples, a drizzle of milk or cream, a drizzle of honey and more cinnamon.
