Ingredients

  • 2 cups rolled oats
  • 1 apple diced, large
  • 2/3 cup applesauce unsweetened
  • 1/2 cup milk
  • 2 egg large
  • 1/3 cup honey
  • 1 teaspoon vanilla extract pure
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup butter melted, unsalted
  • 1/2 cup dried cranberries
  • 1/2 cup pecans chopped
  • brown sugar optional, for sprinkling
  • apple optional, fresh slices; for garnish

Instructions

  1. Preheat the oven to 350°F. Grease a square baking dish (such as an 8 or 9-inch pan).
  2. In a large bowl, combine oats with cinnamon, ginger and salt.
  3. Stir in the wet ingredients: the applesauce, milk, eggs, honey, melted butter and vanilla extract. Next, add the diced apples, dried cranberries, and pecans until well combined.
  4. Spread the mixture into the prepared baking dish. Bake for 25-30 minutes or until set. Sprinkle with brown sugar and additional apple slices when serving, if desired.
