Baked Beans, mexican Chorizo & Coriander

If you can't get Mexican chorizo cook 250gm or 8oz of beef mince with 2 cloves of garlic, 2 teaspoons cumin and 1 teaspoon smoked paprika plus as much chilli as you want. This recipe uses Australian Cup measurements

Ingredients

  • 100 gram onion chopped
  • 40 ml olive oil
  • 1 clove garlic chopped
  • 400 gram tomatoes chopped, or one tin
  • 2 teaspoons cumin ground
  • 1/4 bunch Coriander chopped
  • 250 gram Mexican chorizo cooked
  • 400 gram cannellini beans 1 x can drained
  • 1/2 teaspoon salt fresh pepper
  • 250 gram bacon, rashers
  • 4 whole poached eggs

Instructions

    Cup of Yum
  1. Heat a Medium pan with the olive oil and add the onion, garlic and cumin and saute till softened.
  2. Add the tomatoes and cook till simmering
  3. Add the coriander, chorizo and beans and simmer on low until simmering and well combined.
  4. Season with salt and pepper.
  5. Serve with crisped bacon and poached eggs.
