Ingredients

  • 4 tablespoons fig jam* divided
  • ⅓ cup pitted dates or dried mission figs sliced
  • ⅓ cup shelled pistachios roughly chopped (other nut options: pecans, almonds, hazelnuts, walnuts, or a mix)
  • 1 teaspoon fresh Rosemary finely chopped
  • 12-16 ounce round French brie scored on top

  1. Preheat the oven to 350°F (175°C).
  2. Score the top of the brie in a crisscross pattern and place it in a small cast iron skillet or oven-safe serving dish.
  3. Warm the fig jam: Place the fig jam in a microwave-safe dish and microwave for 30 seconds to soften.
  4. Prepare the topping: In a small bowl, combine the sliced dried figs, rosemary, and chopped nuts. Add half of the fig jam to the mixture and stir to coat everything evenly.
  5. Assemble and bake: Place the prepared brie (in the skillet or dish) on a baking sheet to catch any overflow. Spoon the nut and fig mixture on top of the scored brie. Bake for 10-15 minutes or until the brie is soft and melty.
  6. Let it rest: Remove the brie from the oven and let it sit for 3-5 minutes to settle. Optional: Drizzle some honey and sprinkle a little flake sea salt on top just before serving. 
  7. Serve: Serve warm with your favorite crackers, fruits like sliced apples and pears, or grapes. 

Notes

  • *You can substitute the fig jam with apricot or raspberry jam for a fun flavor variation! Or even add a drizzle of honey before serving for extra sweetness. This simple yet sophisticated dish will be a hit at any gathering!
  • TIPS
  • Score the Brie: Lightly score the top of the brie in a crisscross pattern to help the cheese melt evenly and prevent it from bursting in the oven.
  • Use Room-Temperature Brie: Let the brie sit out for about 15-20 minutes before baking. This helps it bake evenly and melt more smoothly.
  • Don't Overbake: Bake until the brie is soft and gooey but still holds its shape (about 10-15 minutes). Overbaking can cause it to become too runny.
  • Add Toppings After Baking: For a fresher, more vibrant flavor, you can add delicate toppings like herbs or honey after baking.
