Baked Cauliflower with Cheese Casserole

Ingredients

  • 2 small heads cauliflower cut into florets
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 4 ounces cream cheese softened
  • 2 cups shredded gruyere cheese
  • 1 cup shredded cheddar cheese
  • 6 slices cooked bacon crumbled
  • salt and pepper to taste
  • 3 tablespoons finely chopped chives

Instructions

  1. Preheat oven to 350 degrees F.
  2. Fill a large pot with water and bring it to a boil.
  3. Once boiling add the chopped cauliflower. Boil for 5 minutes or until cauliflower is slightly softened. Drain water and set cauliflower aside.
  4. Heat a medium saucepan over medium-high heat. Add butter and let it melt. Add garlic and allow it to cook for about 1 minute.
  5. Add the heavy cream to the butter mixture and bring to a boil then lower to a simmer.
  6. Add cream cheese and Gruyere cheese stirring until it has melted. Add salt and pepper too taste.
  7. Continue stirring over medium heat until the sauce begins to thicken, about 10 minutes.
  8. Add cauliflower to a greased casserole dish.
  9. Pour cheese mixture over the cauliflower and then top with cooked, crumbled bacon, and shredded cheddar cheese.
  10. Coverthe baking dish with foil and bake for 30 minutes or until the cauliflower isfork-tender and the cheese has melted.
  11. Garnish with chives before serving.
