Baked Chicken Caprese (Sheet Pan Recipe)

This sheet pan chicken Caprese bake will give you tender, juicy, perfectly cooked chicken breasts topped with melted fresh mozzarella, and tomatoes cooked just enough to bring out their naturally sweet flavor.

Ingredients

  • 4 boneless skinless chicken breasts 6-8 ounces each
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 tablespoon olive oil
  • 1-2 large tomatoes sliced
  • 4-6 ounces fresh mozzarella sliced into 4 pieces
  • 1/4 cup reduced balsamic vinegar or balsamic glaze see post for instructions
  • chopped fresh basil

Instructions

  1. Preheat the oven to 400°F
  2. Place the chicken breasts in a large bowl. Sprinkle the salt, pepper, garlic powder, and Italian seasoning over the chicken, and add in the olive oil. Toss the chicken in the seasonings and oil until evenly coated.
  3. Arrange the chicken breasts on a sheet pan. Top each chicken breast with 1 slice of mozzarella and 1-2 tomato slices. Top each tomato slice with a dash of salt and pepper.
  4. Bake in the oven for 25-30 minutes. Check the internal temperature of the chicken to ensure it has reached 165°F.
  5. Drizzle each chicken breast with balsamic glaze and top with chopped fresh basil.

Notes

  • Storage: Store leftovers in an airtight container in the fridge up to 4 days. Or freeze chicken breasts (without the mozzarella and tomatoes) for up to 3 months.
