Baked Chicken Fajitas

Baked Chicken Fajitas combine tender chicken tenderloins with sliced onions and mixed bell peppers, all seasoned with a homemade fajita spice blend. The high heat roasting starts by softening the vegetables, followed by a gentler bake that cooks the seasoned chicken through while melding flavors. This method yields juicy, well-spiced chicken with slightly caramelized vegetables, perfect for assembling in warm tortillas or serving alongside a fresh salad.

Ingredients

  • 1 onion sliced
  • 3 bell pepper sliced mix or red, yellow and green
  • 1 1/2 pounds chicken tenderloin
  • 3 tablespoons avocado oil divided
Fajita Seasoning
  • taco seasoning pre-packaged or
  • 1 tablespoon chili powder
  • 2 teaspoons cumin ground
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon oregano dried
  • black pepper to taste
  • salt to taste

Instructions

  1. Place baking sheet in the oven and turn heat to 400 degrees.
  2. In a large bowl toss sliced peppers and onion with 1 1/2 tablespoons of avocado oil. 
  3. Remove hot pan from oven and place vegetables on the baking sheet. Return to oven and cook for 7-8 minutes. 
  4. In the same bowl add chicken tenderloins with remaining avocado oil and taco seasoning. Mix until all pieces of chicken are well coated.
  5. Turn oven down to 350 degrees and add chicken to vegetables. Ensure all the chicken is in a single layer to cook evenly. Bake for 20 minutes.  
  6. In the meantime heat tortillas or prepare green salad.
  7. Remove chicken fajitas from the oven and enjoy with you favorite condiments.

Notes

  • Use avocado oil due to its high smoke point suitable for the initial 400°F baking step.
  • Olive oil is not recommended here as it can start smoking above 374°F.
