Baked Chicken with Rice and Tomatoes

Ingredients

  • 1 cup rice
  • 1 can diced tomatoes undrained
  • 1 1/2 cup water
  • 1 onion chopped
  • 1 red pepper chopped
  • 1 garlic minced, clove
  • 1 teaspoon parsley
  • 1 teaspoon salt
  • 1/2 black pepper
  • 4 chicken thigh boneless, skinless

Instructions

  1. Preheat oven to 400 degrees
  2. Mix all the ingredients except the chicken together and spread in a 9×12 baking dish.
  3. Add chicken on top and sprinkle with a little additional salt, pepper and parsley.
  4. Cover tightly with foil and bake for 40 minutes.
