Ingredients

  • 2 tbsp olive oil
  • 1/2 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp sweetener Optional, or sugar if not Paleo/Whole 30
  • salt
  • 8 tomato large, halved

Instructions

    Cup of Yum
  1. Preheat oven to fan assisted 140C / 160C / 325F / gas 3.
  2. Combine oil, spices, sugar and salt in a bowl, add the tomatoes and mix gently.
  3. Add tomatoes to cast iron baking dish and bake for 1.5 hrs or until tomatoes are caramelised along the edges.
  4. Serve with some salads and corn tortillas for mopping up the juices.

Notes

  • To make baked tomatoes with balsamic vinegar, simply omit the spices and drizzle on some balsamic vinegar instead. It is that simple.
