Baked Cod with Greek Salsa

Tender and flaky cod served with an amazing homemade salsa makes for a restaurant quality fish dinner the whole family will love!

Ingredients

  • 24 ounces fresh cod cut into 6 pieces
  • ⅓ cup tomatoes diced
  • ⅓ cup cucumber diced
  • ¼ cup yellow pepper diced
  • ¼ cup kalamata olives chopped
  • ¼ cup olive oil divided
  • 2 tablespoons red onion minced
  • 2 tablespoons feta cheese crumbled
  • zest and juice of 2 small lemons
  • 1 teaspoon dried oregano divided
  • ½ teaspoon salt divided
  • ¼ teaspoon ground black pepper divided

Instructions

  1. Preheat oven to 400°F.
  2. Dry the pieces of cod with paper towels, then place on a baking sheet lined with a wire rack, sprayed with nonstick spray.
  3. Brush 1 tablespoon of the olive oil over the tops and sides of the cod. Sprinkle half the salt, pepper and oregano over the top.
  4. Bake for 10-12 minutes or until the internal temperature reaches at least 145°F when checked with a thermometer.
  5. While the cod is baking, add the tomatoes, yellow pepper, cucumber, red onion and Kalamata olives to a mixing bowl.
  6. In a separate bowl, add the olive oil, remaining salt, pepper, oregano, lemon juice and zest to a bowl.
  7. Whisk until well combined. Pour the mixture over the chopped veggies.
  8. Mix until well combined and allow to sit at room temperature until ready to serve.
  9. Once the cod is cooked through, serve with some of the salsa over each piece and top with the feta cheese.
