Baked Cod with Greek Salsa

Ingredients
- 24 ounces fresh cod cut into 6 pieces
- ⅓ cup tomatoes diced
- ⅓ cup cucumber diced
- ¼ cup yellow pepper diced
- ¼ cup kalamata olives chopped
- ¼ cup olive oil divided
- 2 tablespoons red onion minced
- 2 tablespoons feta cheese crumbled
- zest and juice of 2 small lemons
- 1 teaspoon dried oregano divided
- ½ teaspoon salt divided
- ¼ teaspoon ground black pepper divided
Instructions
- Preheat oven to 400°F.
- Dry the pieces of cod with paper towels, then place on a baking sheet lined with a wire rack, sprayed with nonstick spray.
- Brush 1 tablespoon of the olive oil over the tops and sides of the cod. Sprinkle half the salt, pepper and oregano over the top.
- Bake for 10-12 minutes or until the internal temperature reaches at least 145°F when checked with a thermometer.
- While the cod is baking, add the tomatoes, yellow pepper, cucumber, red onion and Kalamata olives to a mixing bowl.
- In a separate bowl, add the olive oil, remaining salt, pepper, oregano, lemon juice and zest to a bowl.
- Whisk until well combined. Pour the mixture over the chopped veggies.
- Mix until well combined and allow to sit at room temperature until ready to serve.
- Once the cod is cooked through, serve with some of the salsa over each piece and top with the feta cheese.
