Baked Egg Rolls

Ingredients

  • 12 egg roll wrappers
  • 1 lb ground chicken
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup finely chopped green onions
  • 2 cloves garlic minced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp ground ginger
  • salt and pepper to taste
  • Cooking spray for baking

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. In a skillet over medium heat, cook ground chicken until no longer pink. Add garlic, cabbage, carrots, and green onions. Cook until vegetables are soft, about 5 minutes. Season with soy sauce, sesame oil, ginger, salt, and pepper.
  3. Remove from heat and let the filling cool for about 10 minutes.
  4. Place an egg roll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Place seam side down on the prepared baking sheet. Repeat. Once complete, spray the tops of the egg rolls with cooking spray. Bake for 20-25 minutes, turning halfway through, until golden and crisp.
