Baked Egg with Potatoes, Bacon, and Roasted Tomatoes & Asparagus

Ingredients

  • butter
  • Leftover garlicky potatoes chopped
  • Leftover roasted asparagus & tomatoes
  • 1 lice of bacon crumbled
  • 1-2 tsp of milk
  • 1 egg
  • Sea Salt and Freshly Cracked Pepper to taste
  • Pinch of cayenne to taste

Instructions

  1. Preheat the oven to 350 degrees. Coat a small ramekin with butter.
  2. Place the garlicky potatoes, roasted asparagus & tomatoes, and crumbled bacon into the ramekin; add the milk.
  3. Crack an egg and place it on top then season with sea salt and freshly cracked pepper, to taste, and a pinch of cayenne.
  4. Place into the oven and bake for 5-6 minutes.
  5. Change the oven to broil and cook, watching carefully, for 5 minutes or until the whites are set but the yolk is still soft.
  6. Remove from the oven and serve immediately. Enjoy.
