Ingredients

  • 4 eggs
  • 1/2 /2 cup Monterey jack cheese
  • 1/4 /4 cup salsa
  • salt and pepper
  • parsley optional

Instructions

  1. Preheat oven to 350 degrees. Crack one egg into each baking dish. Divide cheese among baking dishes and sprinkle on top of egg. Place baking dishes onto a baking sheet and place into the oven. Bake for 15-20 minutes until the egg is set according to your preference.
  2. Remove from the oven and top each with a teaspoon of salsa, salt and pepper and parsley, if desired.
  3. Serve warm.
