Ingredients
- 1 cup dried chickpeas soaked overnight, drained, and pat-dry
- 1/2 cup fresh parsley chopped
- 1/2 cup fresh cilantro chopped
- 1/4 cup onion chopped
- 3 cloves garlic minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper optional
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons olive oil for brushing
Instructions
- Preheat your oven to 375°F and line a baking sheet with parchment paper.
- In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne (if using), baking soda, and salt. Pulse until the mixture is finely ground, but not puréed.
- Shape the mixture into small patties (about 2 inches in diameter), and place them on the prepared baking sheet. Brush each patty lightly with olive oil.
- Bake in the preheated oven for 15 minutes, then flip the patties and bake for an additional 15 minutes, or until golden and crispy.
