Baked Falafel Recipe

Ingredients

  • 1 cup dried chickpeas soaked overnight, drained, and pat-dry
  • 1/2 cup fresh parsley chopped
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup onion chopped
  • 3 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper optional
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil for brushing

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne (if using), baking soda, and salt. Pulse until the mixture is finely ground, but not puréed.
  3. Shape the mixture into small patties (about 2 inches in diameter), and place them on the prepared baking sheet. Brush each patty lightly with olive oil.
  4. Bake in the preheated oven for 15 minutes, then flip the patties and bake for an additional 15 minutes, or until golden and crispy.
