Ingredients
- 5 ounces pancetta
- 1 tablespoon minced garlic
- 8 ounce feta cheese in a block
- 12 ounces heirloom cherry tomatoes
- 2 tablespoons olive oil extra virgin
- red pepper flakes to taste
- salt and pepper to taste
- parsley to taste
- 1 pound pasta noodles
- 1 cup pasta water reserved from boiling pasta water
- 1 cup spinach chopped
- 5-6 basil leaves chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Heat an oven safe skillet over medium heat. Add the pancetta and cook through. Add the garlic and cook until fragrant.
- Move the pancetta and garlic to the sides of the pan leaving a hole in the middle. Place the feta block in the center. Place the tomatoes all around the block of feta. Sprinkle olive oil, red pepper flakes, salt, pepper, and parsley over the feta and tomatoes.
- Bake at 400 degrees for 30 minutes.
- While the feta is baking, boil the pasta in a large pot of salted water. Cook until al dente. Reserve one cup of pasta water before draining. Remove the skillet from the oven and stir the contents around, breaking the feta up and crushing the tomatoes. Add the cup of pasta water, spinach, basil, and parmesan cheese. Stir well.
- Add pasta to the sauce and stir to combine. Serve immediately.

Notes
- Optional add-ins: shallots (cook with the pancetta and garlic if adding), broccoli, zucchini, bell peppers, or chicken or Italian sausage for extra protein.
- Make sure to use the feta block, not the crumbles.
- Not a feta fan? Try brie or Boursin cheese.
