Baked Feta Recipe

Baked Feta is a warm, fragrant dish featuring a block of feta cheese baked atop sliced red onion, green bell pepper, and cherry tomatoes. The vegetables and cheese are seasoned with oregano, red pepper flakes, and thyme, and drizzled generously with extra virgin olive oil. Baking softens the feta, creating a creamy texture contrasted by the tender roasted vegetables. It's served hot alongside crusty bread or pita chips to soak up the flavorful juices.

Ingredients

  • ½ red onion sliced
  • ½ green bell pepper sliced into rounds
  • 1/2 cup cherry tomato about 3 ounces, halved
  • 2 tsp oregano dried
  • ½ tsp red pepper flakes optional
  • 3 to 4 fresh thyme optional, sprigs
  • extra virgin olive oil
  • 8 oz feta cheese do not crumble, block quality
  • mint optional, fresh leaves for garnish
  • crusty bread to serve
  • Pita chips to serve

Instructions

  1. Heat the oven to 400 degrees F and adjust a rack in the middle.
  2. Arrange the onions, bell peppers, and cherry tomatoes at the bottom of a ramekin or oven-safe dish. Sprinkle with 1 tsp oregano, pinch red pepper flakes, and add some of the fresh thyme. Drizzle a bit of extra virgin olive oil.
  3. Add the feta on top of the arranged veggies. Season the feta block with the remaining dried oregano, pinch of red pepper flakes and whatever remains of the fresh thyme. Drizzle a generous amount of extra virgin olive oil on the feta and make sure to brush the sides with some of the oil.
  4. Place the baking dish on the middle rack of the oven and bake for 20 to 30 minutes (and if you like, you can stick it under the broiler very briefly to add color).
  5. Serve with pita chips or toasted Italian bread.

Notes

  • Use an oven-safe dish and place a baking sheet underneath for easier handling.
  • Brush bread slices with olive oil and toast them while the feta is baking for fresh toasted accompaniment.
  • Fresh herbs like thyme add subtle fragrance but can be omitted if unavailable.
