Baked Feta with Tomatoes, Olives, and Garlic

Ingredients

  • 4 tsp olive oil divided
  • ½ of 8oz block of feta cheese
  • ½ cup grape tomato halved, mixed
  • 3-4 kalamata olives sliced
  • ¼ shallot sliced thinly, small
  • 1 clove garlic slivered
  • Pinch crushed red pepper flakes
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • 1 tsp oregano chopped, fresh
  • lemon zest from 1

Instructions

  1. Preheat the oven to 375 degrees.
  2. Drizzle 2 teaspoons of olive oil in the bottom of a small cast iron skillet. Swirl to coat the bottom of the skillet.
  3. Place 1/2 an 8 oz block of feta cheese (4 oz) in the center of the cast iron skillet.
  4. Top with halved grape tomatoes, sliced kalamata olives, sliced shallots, and garlic slivers.
  5. Sprinkle with crushed red pepper flakes then season with a touch of sea salt and lots of freshly cracked pepper, to taste.
  6. Drizzle the top with 1 teaspoon of olive oil.
  7. Place into the oven and bake for 20-25 minutes, or until the cheese is starting to get gooey and the tomatoes are tender.
  8. (Note: Some Feta cheeses will only be slightly squishy).
  9. Place the flatbread in the oven for the last 5 minutes of baking time.
  10. Remove from the oven. Cut the flatbread into triangles and place on a serving plate.
  11. Top the baked feta with tomatoes, olives, and garlic with 1 teaspoon of olive oil, fresh oregano, and lemon zest.
  12. Serve immediately. Enjoy.
