Baked Fontina

Ingredients

  • 1½ pounds diced fontina cheese with rind removed
  • 3 tablespoons olive oil
  • 6 cloves thinly sliced garlic
  • 1 tablespoon fresh chopped thyme
  • 2 teaspoons fresh chopped rosemary
  • salt and fresh cracked black pepper to taste
  • 1 sliced French Baguette

  1. Turn the oven broiler on high and adjust oven rack to the top position, about 5 inches from the heat.
  2. Place 1½ pounds diced fontina cheese with rind removed in the bottom of a 12 inch cast-iron pan. Drizzle 3 tablespoons olive oil on top of the cheese.
  3. In a small bowl combine 6 cloves thinly sliced garlic, 1 tablespoon fresh chopped thyme, and 2 teaspoons fresh chopped rosemary. Sprinkle the mixture over the cheese and olive oil and season with salt and fresh cracked black pepper.
  4. Broil for 5-7 minutes or until the cheese is bubbly.
  5. Serve immediately with 1 sliced French Baguette.
