Ingredients
- 2 nectarines or peaches halved and pitted
- Juice of 1/2 lemon
- 1/2 cup Greek yogurt
- 1-2 tablespoons honey
- 2 tablespoons pistachios, chopped
Instructions
- Slice nectarines in half and remove pit.

To Bake:
- Preheat oven to 400°F.
- Place nectarines in a 8 x 8 inch baking dish and squeeze with lemon juice.
- Bake for 10-15 minutes or until tender.
- Remove from oven and cool for several minutes.
To Broil:
- Preheat broiler.
- Place cut nectarines on baking sheet and squeeze with lemon juice.
- Broil 4-5 minutes, cut side up.
To Grill:
- Preheat grill to medium/high heat.
- Squeeze lemon juice on cut nectarines. Grill 3-4 minutes cut side down.
- While nectarines are baking, broiling or grilling, mix yogurt and honey together in a small bowl.
- Spoon yogurt sauce on nectarines and sprinkle with pistachios.
