Baked Oatmeal with Berries

Ingredients

  • 2 cups low-fat milk
  • 1/3 cup egg whites brand Eggland’s Best, liquid
  • 2 teaspoons baking powder
  • salt pinch
  • lime zest of 1
  • 2 teaspoons vanilla
  • 3/4 cup fruit preserves brand Skinnygirl
  • 1 1/2 cups oatmeal brand McCann’s Quick & Easy
  • 1 cup walnuts slightly chopped, brand Fisher Chef’s Naturals
  • 2 cups mixed berries

Instructions

  1. Preheat oven to 350 degrees F.
  2. Grease an 9x9" square pan.
  3. In a bowl whisk the milk, egg whites, zest, vanilla, baking powder and salt.
  4. Warm up the preserves for 20 seconds in the microwave (this will make it easy to incorporate in the recipe).
  5. Add the preserves, walnuts and oatmeal. Mix.
  6. Pour the mixture in the prepared baking pan.
  7. Sprinkle the berries on top.
  8. Bake for 25-35 minutes or until browned on top.
  9. Enjoy!

Notes

  • *For the milk, you can use low-fat milk or any nut milk you may like.
  • I used SkinnyGirl Raspberry Bellini flavor but you may use any other flavor. 
  • This can be refrigerated for up to a wek and heated in an oven.
